Mutton Ghee Rice

OLYMPUS DIGITAL CAMERAOne of my experiments with food which was a HIT 🙂 Very simple preparation which goes very well with a spicy gravy like, Bhuna gosht, Andhra Chilli chicken and many such. Simplest rice dish for a perfect main course. Just marinate the mutton pieces and make ghee rice. Its the same as preparing a ghee rice but with mutton in it 🙂

Whenever Sunil gets mutton, I clean it well, marinate it with turmeric powder, ginger garlic paste and salt. Boil it and store in the refrigerator in a zip-loc pouch and use it whenever I need. One day I was planning to make ghee rice with my Andhra chilli chicken. I had few boiled mutton pieces in my refrigerator and decided to add it in the ghee rice. And guess what… It was a super hit recipe. Using the mutton stock gives a unique flavour to the ghee rice. We do not use green chilli in this.


Mutton – 1/2 kg

Ghee rice/ Jeera rice/Short grain rice – 1 cup

Turmeric powder – 1/4 tsp

Ginger garlic paste – 1/2 tsp

Cinnamon – 1″ stick

Green Cardamom – 2

Cloves – 2

Bay leaf – 1

Ghee – 3 tbsp

Salt to taste


Dividing it in parts

 Part 1 : Marinate the mutton and cook

     Part 2 : Making ghee rice

Part 1: Marinating and cooking mutton

  • In a bowl, add mutton pieces
  • Add turmeric powder, salt and ginger garlic paste.
  • Mix well
  • Place this in a pressure cooker
  • Add 1 cup water and cook till 3 whistles or till done.
  • Now separate the mutton pieces and mutton broth. set aside
  • Meanwhile, wash 1 cup rice thoroughly with water.
  • Soak in water till we need it next.

Part 2 : Making ghee rice

  • In a pressure cooker, add 3 tbsp ghee/clarified butter and allow it to heat.
  • Add bay leaf, cinnamon stick, cloves, green cardamom.
  • Add boiled mutton pieces and saute for few minutes. The flame should be medium.
  • Add soaked rice and saute for few minutes.
  • Now add 2 to 2.2 cups of mutton broth and bring this to boil.
  • Check for salt
  • Cover the cooker with the lid and switch the flame to low
  • Cook for 10-12 minutes.
  • Turn off the gas stove and allow it to cool for the next 20-25 minutes on your kitchen counter
  • Open the lid and add one to two tsp of ghee and mix everything thoroughly.
  • Serve hot 🙂


  • You can also add onions and green chillies if you wish to.
  • If you already have boiled mutton in your refrigerator, You can skip the marinade and cooking part completely and start with the part 2. In that case make sure you soak rice for 15-20 minutes at least.
  • Do not add too much of ginger garlic paste when you marinate the mutton.
