Lemon cupcakes with lemon icing

Tangy n sweet cupcakes which is one of my favourite. 

Ingredients :

Lemon cupcakes:

Maida – 150gms
Caster sugar – 120gms
Butter – 120gms
Salt – a pinch
Eggs – 2
Fresh lemon – 1
Lemon zest – 1tbsp
Baking powder – 1tsp
Baking soda – 1/4tsp
Vanilla essence – 1tsp
Warm water – 3tbsp

Lemon butter icing:

Lemon zest – 1tsp
Icing sugar – 120gms
Butter 50gms
Vanilla essence – 1/4 tsp
Juice of half a lime

Method :

1. Preheat the over at 180C

2. In a clean dry bowl add the caster sugar and beat it on high speed for 2 to 3 minutes or till soft and fluffy

3. Add egg each at a time and beat till it mixes well with the butter sugar mixture.Add vanilla essence and mix.

4. Add the dry ingredients through a seive half at a time and blend it to incorporate the mixture together. Add a little warm water and mix again. Repeat the same process for the rest of the flour and water.

5. Add lemon zest and fold in the batter with a spatula.

6. Line the cupcake mould, pour in the batter and bake for 20mins at 180C  or till a toothpick comes out clean.

7. And its ready. Let the cupcakes cool completely before you proceed with the icing 🙂

Lemon butter icing:

1. Take butter in a clean dry bowl. Beat ur till fluffy.
2. Add half of the icing sugar to it and beat till well incorporated. Add lemon juice, a dash of vanilla essence and rest of the mixture and beat till stiff peaks.
3. Pour it into a piping bag and decorate your cupcakes 🙂

Tips:

1. You can skip egg and make this with just baking soda and baking powder. Instead of egg use 1 tbsp of hung curd and 1/4 cup of sour buttermilk. You should add 1tsp of baking soda and your good to go ahead with the step 4.
